Deviled beef tongue
  • 1 cow tongue
  • 1 bottle Madeira
  • 2 shallots
  • 1/2 bunch parsley
  • 1/4 cup mascarpone
  • 3 tablespoons Dijon
  • 1 tablespoon chili flake’
  • 1 Lemmon zest
  • Salt

Cover tongue in Madeira in a roasting pan and cover with a lid or foil.. Cook in oven at 325 for 5 hours.. Remove outer layer of toung.. It should peel right off with a little work.. Set meat aside and let cool. Chop meat fine and add the rest of the ingredients .. Mix together with a spoon untill it is smooth .. Chill for 24 hours before serving.
