Little Gem Lettuce with Charred Sungold Tomato Vinaigrette
  • 10 Sungold Tomatoes
  • 1 T Walla Walla Onion, finely diced
  • 2 t Balsamic Vinegar
  • 1 T Olive Oil
  • Pinch of Salt
  • Pinch of Pepper
  • One Head Little Gem Lettuce

Place sungold tomatoes on a very hot dry pan and with as little movement as possible allow them to blacken on all sides. Remove tomatoes from heat and allow to cool. While tomatoes are cooling make vinaigrette by combining balsamic vinegar, olive oil, salt, pepper, and diced onion. When tomatoes have cooled roughly dice and combine with vinaigrette. Quarter the head of lettuce, dress with vinaigrette, and enjoy!
