Papas bravas with sunchokes
  • 5 Yukon potatoes
  • 5 large sunchokes
  • 3 tomatoes
  • 4 tablespoons paprika
  • 1 red onion
  • Salt

Large dice pots and sunchokes and cook in boiling water until tender and strain and set aside. Chop tomatoes and onion and sauté until juicy.. Blend the mixture and add paprika and salt to taste. Mix pots and sunchokes with tomatoe sauce until well coated.. In a large cast iron pan sauté the mixture deeply untill is feels rustic and hearty.. Top with aoli and serve
