Pickled Watermelon Rind
  • 1 small watermelon
  • 1/2 cup rice vinegar
  • 1cup water
  • 1/4 cup honey
  • 1 tsp salt
  • 1/8 cup ginger
  • 1 bunch mint
  • 2 limes

Peel watermelon and cut meat from rind.

Largely dice rind. Combine all ingredients except mint in a pot and bring to a boil.Add rind return to boil and simmer for 5 mins until tender.

Remove from heat and let cool over night. Chop mint. Mix in and serve ice cold.
