Roasted Beet & Garlic Hummus
  • 2 Large Beets, roasted
  • 1/2 C Garbanzo Beans, soaked
  • 3 Garlic Cloves, roasted
  • 1 t Salt
  • 1 T Fresh Lemon Juice
  • 1/4 C Olive Oil

In a food processor mix all ingredients together except olive oil. When ingredients are starting to come together add olive oil until desired consistency. Serve with veggies, pita, or on a crostini with cucumber or cheese.
