Sungold and Walla Walla Onion Bruschetta
  • 20 Sungold Tomatoes
  • 2 T Walla Walla Onion, finely diced
  • 2 T Balsamic Vinegar
  • 2 T Olive Oil
  • 1 T Salt
  • 1 T Pepper
  • 1 Baguette, sliced
  • 3 T Huck’s Hollow Italian Seasoning mixed with 1/4 C olive oil

Preheat oven to 425 degrees. Line baking sheet with parchment paper, and arrange baguette in a single laying on sheet. Using a pastry brush, brush olive oil and Italian Seasoning mix on baguette slices. Bake in oven until lightly browned and crunchy. While baking, in a bowl mix together onion, vinegar, oil, salt, and pepper, and set aside. Roughly chop sungold tomatoes and add to the vinaigrette. When crostinis have cooled place a spoonful of tomato mixture on top and serve immediately.
