Swiss Chard Veggie Wrap with Roasted Garlic Aioli
  • 1 Head of Swiss Chard
  • 1 Cucumber, sliced thin
  • 1 Carrot, sliced thin
  • 1/2 Walla Walla Onion, sliced thin
  • 1 Small Beet, grated
  • 1 Egg
  • 1 C Olive Oil
  • 2 Garlic Cloves, roasted
  • Pinch of Salt

Wash swiss chard and separate leaves, keeping whole leaves intact. If leaves are very large, slice in half. To make aioli place egg in food processor, turn on, and very slowly add olive oil. When aioli has come together add roasted garlic and salt and mix until blended, set aside in small bowl or put in squeeze bottle. Lay out swiss chard leaves and in the center of each leaf put a few strips of cucumber, carrot, onion, and beet, then top with aioli. Roll each leaf around the veggies to make a wrap, insert toothpick to hold together. Serve immediately and enjoy!
